When September hits, it forces many to take out their scarves, light sweaters, and boots as the weather begins to add a chill to the air. Yet despite the cooler temperature, fall brings a sense of warmth and intimacy. Restaurant menus begin to shift to hearty stews and the smell of apple cider and warm apple pie become an added luxury. However, if you’re in the predicament I’m in, aka fall doesn’t hit ’til December and winter never makes an arrival, you find yourself improvising to make fall come early.
I chose to make shortbread for a change. I’ve never thought to make these, but I found a Scottish Shortbread recipe in my cookie cookbook and decided to give it a try. They are the perfect tea or coffee cookie, but I also think they are good for breakfast. 😉
